How we roast and ship single-origin coffee

Beanlytics is a specialty coffee roaster in Richmond, British Columbia. We buy single-origin lots, roast them to order in small batches, and ship within 2–4 business days, across Canada. Nothing sits in a warehouse waiting for an order.

Every lot names its farm

Each coffee lists the producer, growing region, altitude, processing method and variety it actually came from, taken from that lot’s paperwork rather than written to sound good. Two on the shelf right now:

• Brazil Yellow Catuai Specialty Coffee Beans — Fazenda Sao Luiz, Cerrado Mineiro, 1,450 masl, Pulped Natural, Yellow Catuai variety.
• Colombia El Diviso Sidra Specialty Coffee Beans — El Diviso, Pitalito - Huila, 1,850 masl, Anaerobic Washed, Sidra variety.

What the processing method changes in the cup

Processing decides more of the flavour than most people expect. Washed coffees have the fruit stripped before drying, which gives a cleaner cup and sharper acidity. Naturals dry inside the whole cherry and carry heavier berry sweetness. Honey process leaves some of the sticky mucilage on the bean and lands between the two, with more body than a washed lot and less ferment than a natural.

Roast date is the date that matters

Roasted coffee is not shelf-stable the way a best-before date implies. It needs a few days to release CO₂ and then drinks at its best for the next couple of weeks, which is the whole reason we roast against orders instead of ahead of them.
