Honey in Limmu, natural in Guji
The two Ethiopian lots we have roasted took different routes from cherry to green bean. The Limmu lot from the Habtamu Gato site, at 1,930 masl, was honey processed: the skin comes off and the seed dries with some of the fruit still on it. It cups as navel orange, lemon and lime, with honey behind them. The Guji lot before it was a natural, dried inside the whole cherry by smallholder farmers between 1,500 and 2,250 masl, and it read as blueberry, dried cranberry and cocoa nib with a taffy sweetness. Same country, and the process decided most of the difference.
Varieties with numbers instead of names
The Limmu lot's varieties are listed as 74112 and 74110, numbered selections from Ethiopia's national coffee research programme rather than a farm's own landrace. The Guji lot was sold as Ethiopian heirloom, the catch-all for the local landraces that most Ethiopian coffee still comes from. When a bag says heirloom it is telling you the variety was never singled out, not that it is older or better than one with a number.
Past Ethiopia lots
