Product Description:
Volcan Azul sits in Costa Rica’s West Valley, and Alejo Castro is the fifth generation to run it. Caturra has been a cornerstone there for more than fifty years, long enough that the farm knows exactly what the variety does on its soil.
This natural-process lot is layered and sweet: Rainier cherry, apricot and strawberry jam up front, hazelnut cream and malted chocolate behind them. It was patio-dried for six days and then finished in a mechanical dryer, which holds the complexity while getting the moisture stable.
Alejo farms for soil health and keeps working on new processing methods, which is unusual for a variety this well established in Central America.
