The lot on the shelf is a Pacas from Pulcal Farm in Antigua, grown by Maria Zelaya Aguirre at 1,750 masl and washed, and it cups as plum, white chocolate and brown sugar with pecan and a lime edge. The organic lot we roasted before it came from the AAPICUC cooperative in Unión Cantinil, Huehuetenango, between 1,500 and 1,900 masl, fully washed and sun-dried, with milk chocolate sweetness. Both washed, so what separates them is the region and the variety: a named farm and a single variety on one side, a cooperative's blended lot on the other.
