Product Description

The Habtamu Gato washing station sits in Ethiopia’s Limu region, in the southwestern highlands, at an exact elevation of 1,930 meters above sea level. This micro-lot processing site operates within a semi-forest highland ecology, where coffee grows under natural shade canopies that slow cherry maturation and help develop deeper sugar complexity — the result is consistently Grade 1 specialty coffee.

The station serves as a centralized collection hub for roughly 109 local smallholder farmers, who bring in a mix of wild and cultivated heirloom varieties dominated by two climate-resilient Ethiopian selections, JARC 74110 and JARC 74112. Lots are hand-sorted at intake to remove any underripe or defective cherries, then fermented cleanly for 20 to 24 hours before the parchment moves to raised African drying beds, where it’s turned continuously and dried slowly over up to 12 days.

While Habtamu Gato occasionally produces rare honey-processed lots — prized for their cherry, grapefruit, and bright lemon character — the station is best known for its immaculate standard washed process. Washed lots from this site are exceptionally clean and tea-like, offering notes of sweet black tea, tangerine, citrus, toffee, and hazelnut butter with a balanced, chewy brightness, while the rarer honey lots lean punchier and more fruit-forward, often scoring around 87.5 SCA points with crisp stone fruit and citric complexity.
