Filter coffee is coffee brewed by gravity — water passes through a bed of ground coffee and a paper or metal filter, producing a clean, nuanced cup that highlights the origin character of the beans.
Filter brewing is where single origin coffee really shines. The slower extraction and paper filtration produce a clean cup with maximum origin transparency — you taste the farm, the altitude, the processing. Our filter picks are coffees we've profiled for clarity and complexity: Ethiopian naturals with blueberry notes, washed Colombians with citrus brightness, exotic varieties like Gesha and Sidra. Every bag ships with a filter grind option calibrated for pour-over.

For bright, fruity cups, start with African origins. Our Ethiopian coffees bring citrus, berry, and floral notes that pour-over methods amplify beautifully. Kenyan and Rwandan coffees offer similar brightness with juicy acidity.
For something more approachable, washed Colombian and Central American coffees deliver sweetness and balance — think caramel, milk chocolate, and stone fruit. These are great everyday filter coffees that taste excellent in a Chemex or drip machine.
For brew ratios, start with 1:16 (15g coffee to 240ml water) at 93°C with a medium-fine grind. Pour in a slow spiral, aiming for a 3-4 minute total brew time. If the cup tastes sour, grind finer. If bitter, grind coarser. Our Beanalyzer Kit is a great way to compare origins side by side and find what you like.

Filter coffee is any coffee brewed by gravity through a paper or metal filter — including pour-over (V60, Chemex, Kalita), batch brewers (Moccamaster), AeroPress, and drip machines. The filter removes oils and fine particles, producing a clean, transparent cup that highlights the origin character of the beans. It's the best way to taste what makes a single origin coffee unique.
Start with a washed Colombian or Brazilian single origin. These produce a balanced, sweet, approachable cup with chocolate and fruit notes — familiar enough to enjoy immediately, interesting enough to make you want to explore further. Our ColomBias and BRAZILLIANCE V1.0 are excellent starting points for filter brewing.
Medium-fine, roughly the texture of sea salt. For V60, grind slightly finer; for Chemex, slightly coarser (the thicker Chemex filters slow the draw-down). If you select 'Filter Grind' at checkout, we calibrate for a standard V60 pour-over. For best results, grind fresh with a burr grinder and adjust based on taste — sour means too coarse, bitter means too fine.
Start with 1:16 — that's 15g of coffee to 240ml of water, or roughly 1g of coffee per ounce of water. Use water at 93°C (just off the boil) and aim for a 3-4 minute total brew time. This ratio works for V60, Chemex, Kalita, and most drip machines. Adjust stronger (1:15) or lighter (1:17) based on your preference.
