Led by fifth-generation producer Alejo Castro, Volcan Azul is celebrated for its precision farming, sustainable practices, and innovative processing techniques. This lot was patio-dried for 6 days, then finished in a mechanical dryer to preserve complexity while achieving optimal moisture stability.
